I recommend the Grilled Mediterranean Vegetable Stack on Bean Mash followed by individual servings of the Strawberry & Citrus Crumble served with a non-dairy cream or non-dairy custard.
The ingredients are very easy to locate and can be found in your local supermarkets... unlike imported plant-based recipe books, where you find yourself having to track down 'specialised' and generally expensive ingredients from Health Shops.
This is definitely a cost effective way to feed yourself and loved ones and you'll be doing your bit for the Earth (and yourself) by adopting an eco-smart attitude and creating something eco-friendly. Why not purchase a copy and keep it in the kitchen for Meat-Free-Mondays, or when a friend or family member who is vegan/vegetarian/lactose intolerant comes around for a visit?
When I wrote this book I was living with my family, and at any given time there were 11 of us in the house... To let you in on a little secret, the one night I prepared the Lentil Cottage Pie for all of us (and we have massive appetites) and it only cost me R 70.00 (Durban 2012). I tell no word of a lie... and we went back for second helpings! I've even managed to 'trick' some of my friends with these recipes, thinking I had gone out of my way to make them a 'normal' meal... only for them to be pleasantly surprised after I had shared that the meal was 100% plant-based. I even had someone tell me, before they knew, that it was ''the best cottage pie I've ever had in my life''... mission accomplished!
